Blueberry Lemon Buttermilk Ice Cream

Beautiful spring weather has us dreaming of ice cream! This recipe is simple, refreshing, sweet and tart all at the same time - and pretty to look at! The perfect compliment to a beautiful spring evening.

For the Blueberries

Ingredients:
  • 1 cup blueberries
  • 1 tablespoon sugar
  • Juice from 1/2 of a lemon
  • 1 teaspoon vodka
Directions:
In a small saucepan, combine the blueberries, sugar and lemon juice. Heat over medium heat until the blueberries are soft, about 10 minutes. Strain into a bowl through a fine mesh sieve, discarding solids. Add the vodka to the blueberry mixture, stir well and set aside to cool.

For the Ice Cream

Ingredients:
  • 2 cups buttermilk
  • 2/3 cups sweetened condensed milk
  • 3/4 cup evaporated milk
  • 1/2 cup heavy whipping cream
  • 1/4 cup sugar
  • 1/2 teaspoon Adams lemon extract
Directions:
In a large bowl, whisk together the buttermilk, sweetened condensed milk, evaporated milk, heavy whipping cream, sugar and lemon extract. Pour the mixture into an ice cream mixing bowl and mix for about 15 minutes. Add the blueberry mixture and continue to mix for 15 more minutes. Eat immediately or transfer to a freezer safe container until desired consistency is reached.
