Cake - Red Chocolate Cake

  • 1/2 cup Shortening
  • 1 1/3 cup Sugar
  • 1 Egg
  • 2 cups Cake Flour, sifted
  • 1 tsp Salt
  • 1 tsp Soda
  • 2 Tbl Hot Coffee (pour over Cocoa)
  • 4 tsp Cocoa
  • 1 cup Sour Milk
  • 1 tsp 'ADAMS BEST" VANILLA
  • 1 tsp ADAMS LEMON EXTRACT
  • 1 tsp ADAMS ORANGE EXTRACT
  • 2 or 2 1/2 tsp ADAMS RED COLOR
Cream sugar and shortening-add egg and mix. Dissolve soda with sour milk and add. Add flavors, color and cocoa and coffee mixture. Add flour and salt and mix well. Bake in 2 layer pans at 350 degrees for about 40 minutes. 'When cool use the following icing or a good fudge icing if you prefer. Blend together 1 lb sifted confectioner's sugar and 1/2 cup soft butter or shortening. Stir in 1 tsp. 'ADAMS BEST" VANILLA, 1 tsp ADAMS LEMON EXTRACT, and 1 tsp ADAMS ORANGE EXTRACT. Add enough cream or evaporated milk to get good spreading consistency.
