Fudge - Chocolate Peanut Butter Fudge

  • 1 Egg, well beaten
  • 1 cup Granulated Sugar
  • 3/4 cup Cornstarch
  • 1/3 cup Milk
  • 1 stick Margarine
  • 2 Tbl Peanut Butter
  • 1 16 oz. box Powdered Sugar
  • 1/2 cup Nuts, chopped (optional)
In mixer bowl, beat egg very well. Set aside. In a saucepan, blend sugar and cornstarch. Add milk. Over medium heat bring to a boil, stirring constantly. Boil 5 minutes. Remove from heat. Whip a small amount of the hot mixture into beaten egg. Very slowly pour beaten egg mixture into saucepan mixture, stirring constantly. Boil 2 more minutes. Remove from heat. Stir in margarine, peanut butter and ADAMS CHOCOLATE EXTRACT until smooth. Return to heat until mixture is very thick. Pour mixture into mixing bowl. Beat in powdered sugar one cup at a time until smooth. Beat in nuts, if desired. Mixture should be stiff. Grease a 12x8 pan. Press mixture into pan. Allow to cool. Cut into 1" squares. Yield: About 4 dozen 1" squares.
