Adams Fruit Cocktail Cake

  • 1 cup sugar
  • 2 cups flour
  • 2 tsp soda
  • 1 can fruit cocktail
  • 2 eggs, beaten
  • 1 cup pecans, coarse chopped
  • 1/2 cup brown sugar
Preheat oven to 350 degrees. Sift together the first three ingredients. Add the fruit cocktail, juice and all. Add "ADAMS BEST" VANILLA and ADAMS BUTTER FLAVOR. Beat the eggs, then add to mixture. Pour batter into well-greased and floured pan (about 8x12x1 1/2). On top of the batter in the pan sprinkle the pecans and brown sugar. Bake in 350 degree oven for 30-35 minutes, or until toothpick inserted into center comes out clean.

» Topping

  • 1 stick (1/2 cup) margarine
  • 1/2 can coconut (Angel Flake)
  • 3/4 cup sugar, half brown and half white
While the cake is baking, combine the topping ingredients in a sauce pan. Bring to a boil, then cook for 2 minutes. Spread mixture over the cake while both are still hot. Cake is nice served warm and can be made ahead. Easily warmed by covering with foil, and putting in oven just before service. Also good unwarmed.
