Garden Pilaster

Serves: 12
Notes: Saute almonds in butter in a Dutch oven. when golden, add hot rice, onion, pepper, salt and rosemary. Toss. Cut tomatoes into eight wedges, sprinkle with seasoned salt, and along with cooked peas. Toss. For best results, prepare just before serving. Rice and peas may be cooked a little early, but not refrigerated. Serves 12.

  • 10 cups unsalted cooked rice
  • 3 tsp. salt
  • season salt to taste
  • 1/2 cup blanched olives
  • 3/4 cup butter
  • 1/2 cup instant minced onion
  • 1/2 tsp. pepper
  • 2 tsp. dried, crushed rosemary
  • 2 medium tomatoes
  • 2 cups frozen peas, cooked
