Cupcakes - Banana Cupcakes

Serves: 18

  • 1 1/2 Cup Sugar
  • 2 Eggs
  • 1/4 cup Buttermilk
  • 2 Cups Flour
  • 1 Teaspoon ADAMS BEST VANILLA
  • 1 Teaspoon ADAMS BANANA EXTRACT or 1 cup smashed bananas
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1/2 Cup Shortening
Preheat to 350 degrees. Line cupcake pan. Cream shortening and sugar with mixer. Add eggs and extracts (or bananas) and buttermilk and mix until combined. Mix all dry ingredients in a separate bowl. Add in flour slowly to wet mixture and mix on low until blended. Fill liners 2/3 full and bake 15 minutes.

  • 3 Table Milk
  • 1/2 Cup Butter
  • 2 1/2 Cups Confectioners Sugar
Blend with mixer until desired consistency. Drizzle over cooled cupcakes.
