Pudding/Custard - Chocolate Baked Pudding

Notes: This recipe is provided by the book "Dining at the Governor's Mansion", by Carol McQueary. It is a recipe that was made and served in the Governor's Mansion by Sarah Lanham, wife of Gov. S.W.T. Lanham, who was the Governor of Texas from 1903-1907.

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/4 pound sweet chocolate
  • 4 eggs
  • 1/2 cup sugar
  • 1 teaspoon ADAMS BEST VANILLA
  • 1 cup milk
Make a thick sauce of butter, flour and milk over low heat and then allow to cool. Melt chocolate over double broiler. Separate eggs and beat the yolks. Add yolks and sugar to chocolate and mix well. Beat eggs whites. Add cooled sauce, egg whites, and ADAMS BEST VANILLA to the chocolate mixture. Fold together and then put in buttered casserole dish. Bake at 300 for 1 hour. Serve hot with whipped cream.
