72 packaged mini pie shells
1 can (15oz) pumpkin
1 can (12oz) evaporated milk
3/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon ADAMS BEST VANILLA
2 large eggs
1 1/2 teaspoon ADAMS GROUND CINNAMON
1/4 teaspoon ADAMS GROUND ALLSPICE
1/4 teaspoon ADAMS GROUND GINGER
3/4 teaspoon ADAMS GROUND NETMEG
Preheat oven to 325 degrees with the rack in the center position. In a large mixing bowl combine sugar, salt, eggs, milk and pumpkin. Blend well. Add cinnamon, ginger, nutmeg, allspice, (or 3 tsp ADAMS PUMPKIN PIE SPICE MIX instead of individual spices) and Adams Best Vanilla. Blend well. Pour into the unbaked pie shells. Bake at 325 degrees for 15 minutes. Allow pies to cool for at least 2 hours prior to serving. Top with whipping cream if desired.
