Caprese on a Stick

Serves: 20

  • 1 pint cherry tomatoes
  • 1 pkg (16oz) mozzarella balls
  • 1 baguette bread stick
  • 1 bunch basil
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • to taste Sea Salt
  • 2 tsp Dried Basil
  • 20 mini skewers
  • to taste Ground Black Pepper
Mix olive oil, balsamic vinegar and dried basil in a small bowl. Wash tomatoes and mozzarella balls and dry. Place them in bowl with balsamic mixture. Mix and cover well. Refrigerate until ready to assemble; or for at least 1 hour to let flavors meld. Cut baguette bread in small bite sized pieces, drizzle with oil and broil until crisp. On a skewer place 1 piece of bread, one tomato, one piece of fresh basil, and one mozzarella ball. Sprinkle with fresh ground pepper and salt to taste. Tip: Use a small drizzle of balsamic glaze (reduced balsamic) to drizzle lightly over completed sticks. Caprese on a stick
