Make quick and easy Hollandaise Sauce Recipe (under Entrees). Mix Cayenne Pepper into completed sauce. In large stock pot, bring 2 quarts water and vinegar to a simmer. Break one egg into ladle and gently place ladle in water and let it sit for 1 minute. Then slide egg off ladle and let continue to cook for 2 minutes. Remove egg and place on paper towel to dry. Complete this process for all eggs. In skillet, cook up Canadian bacon slices until browned and warm. Toast English muffins. Place small amount of sauce on bottom of plate. Top with English muffin, Canadian bacon, egg, then generously cover with more sauce. Makes 8.
