Make Red Velvet Cake and Cream Cheese Frosting as directed (look for recipe in "Dessert" section). Once cake is cool, cut and crumble in large bowl. Mix frosting into bowl (starting with 1/2 amount) until cake mixture will form and hold shape. Using small scoop, form cake mixture into small balls. Melt candy melts as directed on package. Reserve 1/3 candy melt to stay white. Mix 1/3 candy with a few drops red food color to get pink color desired. Mix remaining candy melts with red food color until color desired is reached. Insert candy stick into cake ball about 1/3 of the way. Dip cake ball in colored candy melts to cover ball and 1/8 inch of the candy stick. Stick cake ball in styrofoam upright until dried completely. If additional toppings such as sprinkles or candy are desired, make sure and cover cake ball with them before the candy coating dries.
