Seafood - Smokey Sweet Potato Crusted Salmon

  • 1 1/2 pounds salmon filet
  • 1/2 cup avocado oil
  • 3 Tbl SMOKEY SWEET POTATO RUB
  • 1/2 cup Mango Nectar
Preheat oven to 400 degrees. Mix mango nectar and avocado oil in large bowl. Rinse salmon filet and place in the bowl to marinate for 15 minutes. Remove salmon from marinade, and lay skin side down on a baking sheet covered with foil. Sprinkle with SMOKEY SWEET POTATO RUB. Bake in the oven for 10 minutes or until internal temperature reached 140 degrees. Serve fish hot.
