Bite-Size Tamales

  • 1 lb ground beef (90% lean)
  • 1 lb ground pork (have butcher grind the leanest cut available)
  • 1 cup vegetable juice
  • 4 eggs
  • 2 tsp ADAMS GARLIC POWDER
  • 2-1/2 Tbl ADAMS CHILI POWDER
  • 2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp ADAMS MULTI- SEASON (ALL SEASON)
  • 1/2 tsp ADAMS CAYENNE PEPPER
  • 2-1/2 tsp ADAMS PAPRIKA
  • 1-3/4 tsp ADAMS CUMIN
  • 2 16 oz. cans stewed tomatoes
  • 2 tsp ADAMS MULTI-SEASON (ALL SEASON)
  • 1-1/2 Tbl ADAMS CHILI POWDER
  • 1/2 tsp ADAMS OREGANO
Preheat oven to 350 degrees. Combine beef, pork, vegetable juice and eggs in a large mixing bowl. Blend well. In a separate bowl, combine, ADAMS GARLIC POWDER, 2-1/2 Tbsp. ADAMS CHILI POWDER, cornmeal, flour, 1 tsp. ADAMS MULTI SEASON (ALL SEASON), ADAMS CAYENNE PEPPER, ADAMS PAPRIKA, and ADAMS CUMIN. Mix these dry ingredients with meat. Roll into bite-size balls. Place the tamale balls on 2 large, broiling pans. Bake for 30 minutes. Remove from oven. Drain. While the tamale balls are baking, place tomatoes in a sauce pan. (Do not use an aluminum pan.) Stir in 2 tsp. ADAMS MULTI-SEASON (ALL SEASON), ADAMS OREGANO, and 1-1/2 Tbsp. ADAMS CHILI POWDER. Bring to a boil; simmer for 30 minutes. Place sauce in a large serving dish, add tamale balls. ( If you desire a more liquid sauce, add 1 cup of vegetable juice.)
