Cake - Lanham Mahogany Cake Print Version

Notes: This recipe is provided by the book "Dining at the Governor's Mansion", by Carol McQueary. It is a recipe that was made and served in the Governor's Mansion by Sarah Lanham, wife of Gov. S.W.T. Lanham, who was the Governor of Texas from 1903-1907.
  • 2 ounces bitter chocolate
  • 1/2 cup butter
  • 4 eggs
  • 1/2 cup milk
  • 6 tablespoons boiling water
  • 1 1/2 cups sugar
  • 1 3/4 cup flour
  • 2 teaspoons baking powder
Melt chocolate in boiling water and let cool. Cream butter, sugar, and egg yolks until light. Add cooled chocolate, flour, milk, and baking powder. Mix well. Beat in egg whites and fold into cake mixture. Pour into 2 buttered and floured cake pans and cook at 350 degrees for 20-25 minutes. Make filling and place between cooked cakes before serving. Also great as a bundt cake and place filling in hole and drizzled over cake.

  • 3 cups powdered sugar
  • 1/2 cup butter
  • 1 egg yolk
  • 2 teaspoons chocolate chips
  • 1 ounce cocoa
  • 5 tablespoons strong hot coffee
  • 2 teaspoons ADAMS BEST VANILLA
  • 1 tablespoon cream
  • 1 cup pecans
Cream sugar, butter, and egg yolk. Mix chocolate chips and cocoa with hot coffee. Stir chocolate/coffee mixture with sugar mixture and mix well. Add ADAMS BEST VANILLA and cream and beat until smooth. Fold in pecans. Place filling in between the cooked cakes.
