Cookies - Coconut Oatmeal Cookies Print Version
Dough
  • 1 cup Butter Flavored Shortening
  • 1/2 cup Brown Sugar, firmly packed
  • 2 tsp. Adams Cinnamon Sugar made with "Adams Best" Vanilla
  • 3 Eggs, beaten
  • 3/4 tsp Salt
  • 1 tsp Baking Powder
  • 1-1/2 cups All Purpose Flour (do not use self-rising flour)
  • 7 oz Sweetened Coconut Flakes
  • 1/2 cup Pecans, chopped
  • 2 cups Old Fashioned Oats
Preheat oven to 350 degrees. Grease (not oil) cookie sheets. Combine first 3 ingredients. Mix well. Add eggs. Beat until this mix is fluffy. Add next 2 ingredients. Mix well. Add flour and mix until all flour is blended in. Add the remaining ingredients one at a time. Blend well. Drop spoonfuls of dough on to cookie sheet. Bake for 11-13 minutes on center rack. Remove from cookie sheet when cool. Will keep in freezer for a month if stored in tightly sealed container.
