Brown meat in large pot. Drain grease off. Stir in all spices except salt and cayenne pepper - these are optional to taste. (1/2 teaspoon cayenne pepper will make a mild chili and 1 teaspoon will make a hot chili.) Also add 8 ounces of tomato sauce and 2 cups water. Stir well. Bring to a boil, then reduce, cover, and simmer for 30 minutes. For a thicker chili, mix 1/4 cup water and 4 tablespoons flour or masa together to make a paste. Add to chili, mix well and continue to simmer for an additional 15 minutes. Beans can also be added, if desired.
