Combine minced onion, cinnamon, black pepper, salt, minced garlic, bay leaf and soy sauce. prick spareribs with fork and rub in soy sauce mixture. Marinate overnight or 12 hours. Cook meat over a slow-burning fire 1 hour, turning often. Brush meat while cooking with the brown sugar mixed with water as often as meat looks dry. Cut into serving pieces. Yields 4-6 servings.
