Ingredients:
  • 1 can artichoke hearts, drained
  • 3 fresh tomatoes
  • 1 sweet white onion
  • 1 small head cauliflower
  • 1 small cucumber
  • 1 regular bell pepper
  • 1/2 cup pitted ripe olives
  • 2 regular avocados
Directions:
Peel and quarter tomatoes, chunk onion and cucumbers, cut pepper into strips.  Break cauliflower into small pieces, put everything together except avocados in a small bowl.  mix marinated mixture together and pour over, and chill 1 hour just before serving, add the avocados you've pulled and sliced, arrange in glass bowl.
