Ingredients:
  • 1 cup green and /or yellow split peas
  • 2 1/3 cups water
  • 1/2 tsp. salt
  • 1 small bay leaf
  • 1/8 tsp. garlic powder
  • 2 tbsp. margarine / butter
  • 1/3 cups Garden Vegetable Mix
  • 1 1/3 cup water
  • 1/4 tsp poultry seasoning
  • 2-- 8oz cans tomato sauce
  • 1 lb. sausage
  • 6 large bell peppers
  • 1 cup dry seasoned bread crumbs
Directions:
Combine the first 5 ingredients in a pan. Bring to a boil, reduce heat, and cook 45 minutes or until the peas are tender and water has evaporated. Remove bay leaf and discard. Melt margarine in a skillet. Add water and Garden Vegetable Mix to skillet. Bring to a boil and cook until all of the water has boiled away and the onions, etc. are soft and the onions transparent. Stir the onions into the peas along with the tomato sauce and poultry seasoning. Crumbled the sausage meat. Place in a heavy skillet and brown. Combine sausage and pea mixture. Cut, gut and wash the peppers. Boil the peppers in salted boiling water for 3-4 minutes. Drain and cool. Stuff pepper with pea mixture, divide evenly. Sprinkle bread crumbs on top of the stuffed peppers. Place stuffed peppers in a baking dish with 1/2 cup water in the bottom. Bake at 350 degrees for 45 minutes. Serve hot. Serves 6.
