Corn Relish (Canning)

Perfect served as a quick dip or topping for your favorite nachos, chicken, or tacos.


Recipe makes 12 - 1/2 pint jars (serves 24)

Main Section

  • 1 quart fresh corn kernels
  • 5 cups chopped green bell peppers
  • 2 cups chopped onion
  • 2 cups chopped ripe tomatoes
  • 4 cups white vinegar
  • 2 cups white sugar
  • 1/2 cup SALT
  • 1 Tbl Adams Celery Salt
  • 1 Tbl Tumeric
  • 1 Tbl Mustard Seed
Combine vegetables in a large kettle. Add vinegar, sugar, salt, turmeric, celery, and mustard seed. Heat to boiling, simmer 25 minutes or until the vegetables are tender. Seal in hot, sterilized canning jars. Process for 15 minutes in a boiling-water canner.
