Ingredients:
  • 1 1/2 Pound Ground Beef
  • 1/2 Cup Diced Onion
  • 1 1/2 Tablespoon Adams Ground Cumin
  • 3 Tablespoon Adams Taco's Enchilada's and More Seasoning
  • 1 1/2 teaspoon Adams Garlic Powder
  • 1 Can 10 Ounces Diced Tomatoes with Green Chilies
  • 1 Large Egg
  • 1 Can 15 oz Whole Kernel Corn (drained)
  • 3 Tablespoon Diced Jalapeno (jar)
  • 1/3 Cup Milk
  • 16 Ounces Shredded Mexican Blend Cheese
  • 1 to 1 1/2 Cups Taco Sauce
  • 2/3 Cup Water
  • 1 Box or bag Yellow Corn Bread Mix
Directions:
Preheat oven to 400 degrees. Spray an 11x 7 cooking dish with a cooking spray. Or bake in large round cast iron skillet. Cook Onion and Ground Beef, with Cumin and Garlic Powder until the beef is cooked through. Drain excess grease and add Adams Tacos Enchiladas and More seasoning and water then bring to a boil, reduce heat to simmer, add the can of Diced Tomatoes with Chilies. While the beef mixture is simmering prepare the corn bread. Mix the corn bread per the directions on the box and add the can of drained whole kernel corn and the diced Jalapeno (if you want it spicier add some Jalapeno juice from the jar also). Pour cornbread into a baking dish and bake for 10 to 12 minutes just until set but not browned. Remove the cornbread from the oven and poke holes all over with a fork. Pour the taco sauce over the cornbread to cover as a thin layer, then top with the beef mixture and then the cheese. Bake for another 10 to 15 Minutes until cheese is melted. You can serve as is or with Sour Cream, Guacamole or any topping you prefer. This can also be made with Ground Chicken or Ground Turkey if you prefer. If you prefer Vegetarian just eliminate the beef steps and make the corn bread then add a layer of vegetarian refried beans with some Taco's Enchiladas and More seasoning stirred in, spread the beans on the cornbread in place of the beef and add a layer of black beans and top with the cheese bake again until cheese is melted.
