Ingredients:
  • 2 cups Dry Baking Mix
  • 3/4 cup Chopped Walnuts
  • 2 tablespoons Granulated Sugar
  • 2 Eggs
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Zucchini
  • 1/4 cup Milk
  • 8 oz Carton Plain Yogurt
  • 3/4 teaspoon ADAMS DILL
  • 1/2 teaspoon ADAMS GARLIC SALT
Directions:
Preheat the oven to 400 degrees. Spray a loaf pan or muffin tin with nonstick cooking spray. In medium bowl, combine the yogurt, milk and eggs.  Stir with a whisk until smooth. Add the cheese, 1/2 cup walnuts and zucchini and stir to combine. In a large bowl combine baking mix, sugar, dill and garlic salt. Stir well to combine. Make a well in the center of the mixed dry ingredients.  Pour the yogurt mixture into the center of the well. Using a rubber spatula, fold the two mixtures together just until they are combined.  Pour the mixture into the prepared loaf pan or muffin tin (2/3 full) and top with 1/4 cup walnuts if desired. Bake in the oven for 22-25 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.  Remove from the oven, sprinkle with additional cheese (if desired) and allow to cool for 5 minutes before removng from the pan or tins to cool on a wire rack.
